Is there a rubber duck emoji?

No. Duck is the only emoji with duck in its name, and CLDR, Unicode's list of search words, files nothing under rubber. The Rubber duck combo here puts Duck between Bathtub and Bubbles, and copies as one piece.

Is there a duckling or baby duck emoji?

Not by name. CLDR files duckling under Swan alone, and the three baby birds are all named chick. Baby chick stands in here. In plain text, π“…· is a hieroglyph Unicode describes as a duckling.

What does the duck emoji mean?

Unicode's data says only what it is: CLDR's four search words are animal, bird, duck and ornithology. The rest comes from sayings, and the combos spell several out: Lucky duck, Water off a duck's back, and Out for a duck, cricket's score of zero.
