Two fingers, five skin tones

Peace symbol copy and paste comes in two styles. The tile carries a variation selector, U+FE0F, which asks for the colour picture. Under More options, Text style swaps in U+FE0E: the same character, flat, in the colour of your writing. The bare ☮ in the plain text group has neither. A skin tone takes the selector's place: the medium hand is U+270C U+1F3FD.

Mind the palm in person: turned inward, the two fingers are an insult in Great Britain, Ireland, Australia, New Zealand and South Africa, Wikipedia notes.

Is the peace sign emoji the hand or the circle?
Unicode gives neither that name. The hand is Victory hand, filed under peace by CLDR. The circle is Peace symbol, the only emoji with peace in its name. Both date from Unicode 1.1, June 1993. For peace sign emoji copy and paste, take the hand.
Where does the peace symbol come from?
Gerald Holtom designed it in 1958 for the British Campaign for Nuclear Disarmament. Wikipedia describes it as the semaphore signals for N and D superimposed, inside a circle. Marchers carried it that April from Trafalgar Square to Aldermaston, and it was never copyrighted or trademarked.
Is there an olive branch emoji?
No. Unicode has Olive, which CLDR files under food and olive only. Wikipedia dates the olive branch as a symbol of peace to at least fifth-century BC Greece, and the dove to the early Christians. The Dove and olive combo pairs them.
