Is there a girl ninja or a boy ninja emoji?

No. Unicode's emoji list, version 18.0, has one Ninja plus the same character in five skin tones, six entries in all. No sequence joins it to the male or female sign, which is how Man detective and Woman detective are built.

Is there a shuriken or katana emoji?

Not by name. No emoji is called shuriken, katana, samurai or nunchaku, and CLDR lists none of those words for any emoji. What exists: Dagger, Crossed swords, and Kitchen knife, whose formal character name is Hocho, glossed in Unicode's names list as Japanese kitchen knife.

What does CLDR file the ninja under?
