Which one is the eyes emoji?

Eyes, U+1F440: a pair with no face, which Unicode files under body parts. CLDR gives it look, looking, seeing and googly, search words no other emoji has. The single Eye, U+1F441, is a separate character with a plain text form.

Is there a side-eye emoji?

Not by name. No emoji name contains side-eye, and the only emoji CLDR files under side is Cooking. The nearest are Unamused face and Smirking face, which Emojipedia describes with eyes looking to the side. Wikipedia's list of emoticons records >_> as a sideways look.

What is ΰ² _ΰ²  made of?

Two letters and an underscore. Each eye is U+0CA0, which Unicode names KANNADA LETTER TTHA, and Wikipedia's list of emoticons records the face as the Look of Disapproval. (눈_눈) does the same with a Korean syllable that Wiktionary glosses as eye.

The 35 emoji, their names, code points, skin tones, subgroups and Emoji version numbers come from emoji-test.txt, version 18.0 (https://www.unicode.org/Public/18.0.0/emoji/emoji-test.txt); names are the CLDR short names printed in that file, in sentence case. The search words quoted in the notes are from the CLDR English annotations (https://github.com/unicode-org/cldr/blob/main/common/annotations/en.xml, main branch). The two groups labelled Eye in the name together hold every emoji whose name in that file contains eye, eyes or eyebrow: 19 in all, of which three (Eyes, Eye, Eye in speech bubble) are not faces.
